Orange Chicken and Noodles

Inspired by Panda Express and this recipe. This is a 4 pot recipe, but it is totally worth it. The chicken can be substituted with frozen popcorn chicken or other frozen chicken chunks.


Time: about 1 Hour to Make

Servings: 4


Chicken Ingredients:

- olive oil

- chicken breast


Sauce Ingredients:

- 1 and 1/4 cup orange juice

- 1/2 cup of sugar

- 2 tablespoons of rice vinegar

- 2 tablespoons of soy sauce

- 1/4 teaspoon ginger (nutmeg works for a substitution)

- 1 teaspoon of jarred garlic

- 1-2 tablespoons of garlic chili paste (edit for level of spiciness you want)


Noodle Ingredients:

- diced carrots, celery, and onions (can be frozen)

- lo mein noodles

- soy sauce


Steps:

1) Cut the chicken into smallish chunks. Place the chicken in a splash of olive oil in a sauté pan and heat on medium heat.


2) Mix all the sauce ingredients together in a pot (1 and 1/4 cup orange juice, 1/2 cup of sugar, 2 tablespoons of rice vinegar, 2 tablespoons of soy sauce, 1/4 teaspoon ginger, 1 teaspoon of jarred garlic, and 1-2 tablespoons of garlic chili paste). Cook on medium low heat.


3) Put the water for the pasta on to boil.


4) Place the diced veggies and a splash of olive oil in a 4th pot. Cook on medium low height until desired stiffness.


5) Once the chicken is cooked, add the orange chicken sauce to the chicken pan. Turn the temperature to medium low. This will help thicken the sauce.


6) Cook the lo mein according to the box directions.


7) Once the noodles are drained, but them back in their pot. Add the cooked veggies and enough soy sauce to coat the noodles.


8) Serve and enjoy :)
