Homemade Pasta Sauce

This pasta sauce is a bit chunky, but very tasty and full of veggies. This recipe is my mother's. We like to use garden-grown veggies when they are available. All measurements can be customized to what feels right.

Time: about 50 minutes
Ingredients:
- 6-8 tomatoes
- 2-3 bell peppers (any color)
- 1/2 an onion
- 1/2 head of garlic
- 4 tablespoons of olive oil
- 4 tablespoons of butter
- oregano
- basil
- cheese
Steps:
1) Finely chop the garlic and onion. Chop the peppers and tomatoes, dice them in a food processor, and set them aside.
2) Heat the olive oil on medium low heat and sauté the garlic and onion until golden.
3) Add the diced peppers, tomatoes, and butter to the pan and stir.
4) Add oregano, basil, and cheese to taste. Stir.
5) Simmer for 30 minutes uncovered, stirring occasionally. Add a little bit of flour if it is too runny.
6) Serve with pasta. Or eat it like a soup :)
